Do any of you remember the “Galloping Gourmet”? I remember watching him with my mom as a kid, and although his show was a fabulous romp, the recipes were literally deadly, filled with lots of fat and sugar. Many years later, he and his wife Treena produced another show called “.....”, in which Kerr revised so-called “classic” recipes into ones that were more health conscious and yet remained quite tasty. This recipe is actually an adaptation of one of those.

Banana Bread

Baking time: 65 minutes

brown sugar

butter

egg

natural yogurt

milk

whole wheat flour

unbleached white flour

baking powder

wonderfully ripe bananas

pure vanilla

cinnamon

allspice

chopped dried bananas/figs/prunes/raisins

sliced almonds

Ingredients

Preheat oven to 350 degrees and lightly grease loaf pan.


In a large bowl, use mixer to cream together sugar and butter. Continue to mix while adding egg, yogurt and milk.


In a medium-sized bowl sift together the flour and baking powder.


In a small bowl, mash together the bananas and spices.


Add the bananas to the egg mixture. Continue mixing. Slowly add dry ingredients. Do not overmix. Add dried fruit.


Pour into loaf pan and sprinkle the sliced almonds overtop. Push them in a little with a knife. Drop the pan on the counter to get the air out.


Bake at 350 degrees for 65 minutes.


Set pan on cooling rack and let cool for a bit before dumping out onto rack.
